Ingredients
- Flax egg: 3 tbsp flaxseed meal + 6 tbsp of water. In a small bowl, stir together until fully combined; let the mixture sit for 5 minutes till thickens and turns gelatinous.
- 3 large bananas
- 2 tbsp coconut oil
- 2 tbsp nut butter
- 1 tbsp coconut sugar
- 1 tsp baking powder
- 1 tsp baking soda
- 1 cup oat flour (you can also use non gluten-free, all-purpose flour to make your bread a little less mushy)
- 1 cup almond flour
- ¼ cup chocolate chips ( or more if you are a chocolate lover)
- ¼ cup coconut flakes
Recipe
- Preheat the oven to 180C/350F. Line a loaf pan with parchment paper.
- In a large mixing bowl, add your smashed bananas, flax egg, nut butter, coconut oil, coconut sugar, vanilla, baking soda, and baking powder; mix well, then mix the oat flour and almond flour and mix again.
- Once it’s all combined, add the chocolate chips and coconut flakes and mix until combined.
- Transfer your batter to the lined loaf pan, and bake for 45-50 minutes, or until a toothpick comes out, just clean from the center.
