Apple Crisp

Ingredients

Apple filling:

  • 8 medium apples- cored and diced small, enough to fill 3/4 of baking dish
  • 2 tbsp cornstarch
  • 1 orange- juiced or 1/4 cup orange juice
  • 1 tsp cinnamon
    Topping:
  • 1 1/4 cup rolled oats
  • 3/4 cup all-purpose flour (or GF flour of your choice)
  • 1 cup brown sugar
  • 1/3 cup of walnuts or pecans (optional)
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp salt
  • 1/2 cup vegan butter

Preheat oven to 350•
Lightly grease a 9 x 13 casserole

  1. Core and chop the apples into 1” chunks. Place the apples in a large bowl with room to stir.
  2. Sprinkle over the apples, cornstarch, cinnamon, and orange juice- you can use a fork as you squeeze to get all the juice out and some pulp.
  3. Mix the apples and ingredients together well so the apples are all coated. Dump the apples into the casserole dish and spread evenly.
  4. In a large bowl, mix together the flour, brown sugar, oats, nuts, cinnamon, nutmeg, and salt until evenly combined.
  5. Using clean fingers or a pastry cutter, work the softened vegan butter or coconut oil into the flour mixture until well combined and forms a loose crumb texture.
  6. Sprinkle evenly over the apples in the dish. Add a sprinkle of cinnamon on top if you’d like.
  7. Place in the center rack of the oven and bake for 35- 45 minutes, until the top is golden brown, and the apples are tender.
  8. When it is done, you will see the apple mixture bubbling, especially on the sides.
  9. Best eaten warm with a scoop of non-dairy vanilla ice cream or coconut cream, if desired.

    Notes:
  • Apples that are old and not as crisp and fresh-looking work great for this recipe. Use them
    up!
  • Use sweeter-tasting apples such as Fuji or Gala; you can also use a combination of apples.
  • Softer apples, such as Macintosh may require less baking time
  • For a warmer spiced crisp, add in 1 tsp pumpkin pie spice instead of nutmeg or add a 1/2 teaspoon of ginger
