Ingredients
1/4 cup old-fashioned rolled oats
1 15 oz. can black beans, drained and rinsed
1/4 cup almond butter
6 tbsp raw cacao powder
1 tbsp ground flax seeds
2 tsp vanilla extract
1 /2 cup coconut sugar
5 dates
2 tsp apple cider vinegar
1/4 tsp salt
1/2 tsp baking soda
3/4 cup dark chocolate chips
*If you prefer not to use dates, just add more coconut sugar; instead of 1/2 cup, add 1 cup.
Recipe
- Preheat the oven to 350°F and line an 8-inch square baking dish with parchment paper.
- In a food processor, process the rolled oats until they resemble coarse flour.
- Add in the black beans, cacao powder, ground flax, vanilla, coconut sugar, vinegar, almond butter, salt, and baking soda.
- Process until a smooth and thick batter is formed.
- Add the chocolate chips to the batter, and pulse briefly to mix them in.
- Transfer the batter to the baking dish.
The batter will be thick, use the spatula to spread it evenly into the pan. - Bake for about 30 minutes.
