Ingredients
- 1 cup brown sugar
- 1 cup peanut butter
- 2 tsp vanilla extract
- 1 cup oat flour
- 1 tsp baking soda
- ⅛ tsp salt
- ¼ cup almond milk
- Chocolate chips 1/2 cup to 1 cup, depending on preference
Recipe
- Preheat oven to 350 degrees.
- Mix the brown sugar and peanut butter together in a mixing bowl for about a minute. Add two teaspoons vanilla extract and mix for 30 seconds. In a separate bowl, blend oat flour, baking soda, and salt.
- Mix dry and wet ingredients. Add ¼ cup almond milk and stir in chocolate chips.
- If possible, chill the dough for at least an hour (or alternately spoon it onto cookie sheets and place in freezer for 10 minutes).
- Place cookies on a baking sheet and press them down with the back of a fork.
- Cook for 10 to 12 minutes until very lightly browned.
- Allow to cool on baking sheet for 10 minutes before removing to wire rack.
- Freeze any extra cookies for future.
