Billie’s Favorite Peanut Butter Chocolate Chip Cookies

Ingredients
  • 1 cup brown sugar
  • 1 cup peanut butter
  • 2 tsp vanilla extract
  • 1 cup oat flour
  • 1 tsp baking soda
  • ⅛ tsp salt
  • ¼ cup almond milk
  • Chocolate chips 1/2 cup to 1 cup, depending on preference
Recipe
  1. Preheat oven to 350 degrees.
  2. Mix the brown sugar and peanut butter together in a mixing bowl for about a minute. Add two teaspoons vanilla extract and mix for 30 seconds. In a separate bowl, blend oat flour, baking soda, and salt.
  3. Mix dry and wet ingredients. Add ¼ cup almond milk and stir in chocolate chips.
  4. If possible, chill the dough for at least an hour (or alternately spoon it onto cookie sheets and place in freezer for 10 minutes).
  5. Place cookies on a baking sheet and press them down with the back of a fork.
  6. Cook for 10 to 12 minutes until very lightly browned.
  7. Allow to cool on baking sheet for 10 minutes before removing to wire rack.
  8. Freeze any extra cookies for future.
