Black Bean Brownies

1/4 cup old-fashioned rolled oats
1 15 oz. can black beans, drained and rinsed
1/4 cup almond butter
6 tbsp raw cacao powder
1 tbsp ground flax seeds
2 tsp vanilla extract
1 /2 cup coconut sugar
5 dates
2 tsp apple cider vinegar
1/4 tsp salt
1/2 tsp baking soda
3/4 cup dark chocolate chips
*If you prefer not to use dates, just add more coconut sugar; instead of 1/2 cup, add 1 cup.

  1. Preheat the oven to 350°F and line an 8-inch square baking dish with parchment paper.
  2. In a food processor, process the rolled oats until they resemble coarse flour.
  3. Add in the black beans, cacao powder, ground flax, vanilla, coconut sugar, vinegar, almond butter, salt, and baking soda.
  4. Process until a smooth and thick batter is formed.
  5. Add the chocolate chips to the batter, and pulse briefly to mix them in.
  6. Transfer the batter to the baking dish.
    The batter will be thick, use the spatula to spread it evenly into the pan.
  7. Bake for about 30 minutes.
