Ingredients
- 3 medium zucchini/calabacitas
- 1 red pepper
- 3 medium tomatoes
- Cilantro
- ¼ onion
- ½ cup corn
- ½ cup chickpeas
- ½ tbsp avocado oil
- ½ tsp smoked paprika
- ¼ tsp cumin
- ½ tsp coriander (optional)
- ½ cup water
- Salt
Recipe
- Heat oil on a pan over medium heat.
- Add onions and sauté for 5 minutes or until onions become transparent.
- Add tomato and red pepper, stirring constantly for 3-4 minutes.
- Season with smoked paprika, cumin, and coriander.
- Add water, zucchini, corn, cilantro, chickpeas, and salt.
- Mix well, allow everything to cook for about 5 minutes, and simmer until the vegetables are tender.
