Ingredients
  • 3 medium zucchini/calabacitas
  • 1 red pepper
  • 3 medium tomatoes
  • Cilantro
  • ¼ onion
  • ½ cup corn
  • ½ cup chickpeas
  • ½ tbsp avocado oil
  • ½ tsp smoked paprika
  • ¼ tsp cumin
  • ½ tsp coriander (optional)
  • ½ cup water
  • Salt
Recipe
  1. Heat oil on a pan over medium heat.

  2. Add onions and sauté for 5 minutes or until onions become transparent.

  3. Add tomato and red pepper, stirring constantly for 3-4 minutes.
  4. Season with smoked paprika, cumin, and coriander.
  5. Add water, zucchini, corn, cilantro, chickpeas, and salt.

  6. Mix well, allow everything to cook for about 5 minutes, and simmer until the vegetables are tender.
  7. Enjoy!
