Ingredients
- 1 cup plant-based milk (use your favorite canned coconut milk to add extra creaminess)
- 4 tbsp chia seeds
- ½ tsp vanilla
- ⅛ cup maple syrup or you can sweeten it to taste with sugar, agave syrup, coconut sugar, etc.
- Optional for Chocolate Chia Seed Pudding
- 4oz melted dark chocolate
- ⅛ cup plant-based milk
Recipe
- Add milk, chia seeds, vanilla, and maple syrup (or desired sweetener) to a glass container and mix well. You can also make this in a jar and shake to combine.
- If you are making chocolate pudding, add 4oz of dark chocolate to 1/8 plant-based milk and heat in the microwave, stirring every 15 seconds until the chocolate is melted and combined. Add to chia mixture.
- Let the mixture sit. After 10 or so minutes have passed, stir again.
- Chill in refrigerator until set – (about 1 to 2 hours.)
- Top or layer with any favorite toppings.
