Chia Seed Pudding

Optionals: Chocolate shavings, peanut butter, fruit, jam
  • 1 cup plant-based milk (use your favorite canned coconut milk to add extra creaminess)
  • 4 tbsp chia seeds 
  • ½ tsp vanilla 
  • ⅛ cup maple syrup or you can sweeten it to taste with sugar, agave syrup, coconut sugar, etc. 
  • Optional for Chocolate Chia Seed Pudding
  • 4oz melted dark chocolate 
  • ⅛ cup plant-based milk
  1. Add milk, chia seeds, vanilla, and maple syrup (or desired sweetener)  to a glass container and mix well. You can also make this in a jar and shake to combine. 
  1. If you are making chocolate pudding, add 4oz of dark chocolate to 1/8 plant-based milk and heat in the microwave, stirring every 15 seconds until the chocolate is melted and combined.  Add to chia mixture. 
  1. Let the mixture sit. After 10 or so minutes have passed, stir again.
  1. Chill in refrigerator until set – (about 1 to 2 hours.) 
  2. Top or layer with any favorite toppings.
  3. Enjoy!
