Ingredients
• 2 cups shelled edamame
• ¾ cup chickpeas, drained and rinsed
• 1 clove garlic or garlic powder
• ½ cup fresh basil, plus more for garnish
• ¼ cup lemon juice
• ½ teaspoon sea salt
• freshly cracked pepper
• ⅓ cup extra virgin olive oil
Recipe
- In a food processor, combine the cooked chickpeas, edamame, garlic, lemon juice, basil, salt, and pepper.
- Blend the ingredients and Slowly blend in the olive oil until smooth.
add cold water gradually until you achieve your desired consistency. - Taste and adjust the seasonings as needed. Add more lemon juice, salt, or pepper according to your preference.
- Once smooth and well-blended, transfer the edamame hummus to a serving dish.
- Optionally, drizzle with a bit of olive oil and sprinkle some additional chickpeas and basil for garnish.
- Serve with fresh veggies, pita bread, or your favorite dipping choices.
