Edamame Hummus

• 2 cups shelled edamame
• ¾ cup chickpeas, drained and rinsed
• 1 clove garlic or garlic powder
• ½ cup fresh basil, plus more for garnish
• ¼ cup lemon juice
• ½ teaspoon sea salt
• freshly cracked pepper
• ⅓ cup extra virgin olive oil

    1. In a food processor, combine the cooked chickpeas, edamame, garlic, lemon juice, basil, salt, and pepper.
    2. Blend the ingredients and Slowly blend in the olive oil until smooth.
      add cold water gradually until you achieve your desired consistency.
    3. Taste and adjust the seasonings as needed. Add more lemon juice, salt, or pepper according to your preference.
    4. Once smooth and well-blended, transfer the edamame hummus to a serving dish.
    5. Optionally, drizzle with a bit of olive oil and sprinkle some additional chickpeas and basil for garnish.
    6. Serve with fresh veggies, pita bread, or your favorite dipping choices.
