Gluten-Free Banana Bread

  • Flax egg: 3 tbsp flaxseed meal + 6 tbsp of water. In a small bowl, stir together until fully combined; let the mixture sit for 5 minutes till thickens and turns gelatinous.
  • 3 large bananas
  • 2 tbsp coconut oil
  • 2 tbsp nut butter
  • 1 tbsp coconut sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 cup oat flour (you can also use non gluten-free, all-purpose flour to make your bread a little less mushy)
  • 1 cup almond flour
  • ¼ cup chocolate chips ( or more if you are a chocolate lover)
  • ¼ cup coconut flakes
  1. Preheat the oven to 180C/350F. Line a loaf pan with parchment paper.
  2. In a large mixing bowl, add your smashed bananas, flax egg, nut butter, coconut oil, coconut sugar, vanilla, baking soda, and baking powder; mix well, then mix the oat flour and almond flour and mix again.
  3. Once it’s all combined, add the chocolate chips and coconut flakes and mix until combined.
  4. Transfer your batter to the lined loaf pan, and bake for 45-50 minutes, or until a toothpick comes out, just clean from the center.
