Hibiscus Taco

Yields: 6 tostados
  • 2 cups of hibiscus
  • 4 cups of water
  • 6 tostadas
  • ¾ cups refried beans
  • ⅓ cup vegan feta cheese
  • 2 tomatoes
  • ½ onion
  • ¼ cup sugar (coconut, brown or regular)
  • Salt
  1. Wash the hibiscus quickly enough to remove the dirt and put it in a pot with water until it boils.
  2. Strain the hibiscus (don’t throw the water away; use it to make agua fresca).
  3. In a pan, sauté the onion, tomato, and hibiscus with a little avocado oil, season with salt, and then add the sugar until the acid is removed from the hibiscus.
  4. Spread the beans on a tostada, add the hibiscus mixture, and sprinkle the cheese on top.
  5. Enjoy!
