Peach Ice Cream

Ingredients
  • 1 12–ounce can of full-fat coconut milk, chilled
  • 4 fresh ripe peaches
  • ⅓ cup maple syrup (or 1 cup of pitted dates)
  • 1 tsp vanilla extract
Recipe
  1. Combine the coconut milk, peaches, maple syrup or dates, and vanilla in the base of a high-speed blender.
  2. Once it’s smooth, pour the mixture into a freezer-safe container and freeze.
  3. Enjoy!
