Ingredients
- 1 cup old-fashioned oats
- 1 cup rice puffs
- 1 scoop of vegan protein powder (optional)
- 1 cup mixed nuts
- ¼ cup dried apricots
- ¼ cup cranberries
- ¼ cup pumpkin seeds
- ¼ cup sunflower seeds
- ¼ cup nut butter (I used almond)
- 1 tsp vanilla
- ¼ cup maple syrup
- 2 tbsp coconut oil
- Pinch of salt
- Orange peel
- ½ cup chocolate chips
- 1 tbsp coconut oil
Recipe
- Add all the wet ingredients to a bowl and mix until everything is smooth. Then add all the dry ingredients and mix well, including the orange peel.
- Transfer into a loaf tin and press down using a spatula.
- Break up the chocolate into a heat-proof bowl and add the coconut oil. Melt in the microwave or over a pan of simmering water.
- Pour the chocolate on top, top with sea salt and some orange peel, then refrigerate until set.
- Slice into bars.
