Protein Bars

Optionals: vegan protein powder
  • 1 cup old-fashioned oats
  • 1 cup rice puffs
  • 1 scoop of vegan protein powder (optional)
  • 1 cup mixed nuts
  • ¼ cup dried apricots
  • ¼ cup cranberries
  • ¼ cup pumpkin seeds
  • ¼ cup sunflower seeds
  • ¼ cup nut butter (I used almond)
  • 1 tsp vanilla
  • ¼ cup maple syrup
  • 2 tbsp coconut oil
  • Pinch of salt
  • Orange peel
  • ½ cup chocolate chips
  • 1 tbsp coconut oil
    1. Add all the wet ingredients to a bowl and mix until everything is smooth. Then add all the dry ingredients and mix well, including the orange peel.

    2. Transfer into a loaf tin and press down using a spatula. 

    3. Break up the chocolate into a heat-proof bowl and add the coconut oil. Melt in the microwave or over a pan of simmering water. 

    4. Pour the chocolate on top, top with sea salt and some orange peel, then refrigerate until set. 

    5. Slice into bars.
    6. Enjoy!
