Sweet Potato Brownie

Optionals: 1 cup vegan chocolate chips, 1 cup nuts
  • ½ cup vegan butter (such as Earth Balance)
  • 1 ½ cup white sugar (feel free to try this recipe with coconut sugar)
  • ½ tsp salt 
  • ¾ cup good quality cocoa powder 
  • ½ tsp vanilla extract 
  • ¾ cup cooked, mashed sweet potato 
  • ¾ cup flour (can use a gluten-free 1:1 blend)
  • 1 tsp baking powder
  1. Preheat oven to 350 F
  1. Coat the bottom and sides of the brownie pan with vegan butter or coconut oil.
  1. Melt vegan butter in the microwave or on the stovetop and combine with sugar. Stirring well 
  1. Stir in cocoa powder, mashed sweet potato, vanilla, and stir to combine. 
  1. Mix flour, baking powder, and salt in a separate bowl. 
  1. Pour dry ingredients into wet ingredients and stir to combine. 
  1. If desired, stir in chocolate chips and nuts.
  2. Pour the batter into the prepared pan and place in a preheated oven. It should take about 35 minutes to cook, but make sure to keep an eye on it. When done, the top should be firm but not hard. Let cool before slicing.
