Ingredients
- 16 ounces of firm tofu
- 1 tsp of salt
- 1 tsp of black pepper
- 1 tsp of lemon juice
- 3 tbsp of nutritional yeast
- 1/4 tsp of granulated onion
- 1/4 tsp of granulated garlic
- 1 tortilla
Recipe
- Start by draining the tofu and pressing out any excess moisture.
- In a bowl, crumble the tofu into small pieces using your hands or a fork.
- Add the salt, black pepper, lemon juice, nutritional yeast, granulated onion, and granulated garlic to the tofu and mix well.
- Heat a non-stick skillet over medium heat and add the tofu mixture, cooking until it is heated through and lightly browned.
- Once the tofu scramble is cooked, remove it from the heat and set it aside to cool slightly before using it as a filling for your quesadilla.
