Tofu Scramble Quesadilla

  • 16 ounces of firm tofu
  • 1 tsp of salt
  • 1 tsp of black pepper
  • 1 tsp of lemon juice
  • 3 tbsp of nutritional yeast
  • 1/4 tsp of granulated onion
  • 1/4 tsp of granulated garlic
  • 1 tortilla
  1.  Start by draining the tofu and pressing out any excess moisture.
  2. In a bowl, crumble the tofu into small pieces using your hands or a fork.
  3. Add the salt, black pepper, lemon juice, nutritional yeast, granulated onion, and granulated garlic to the tofu and mix well.
  4. Heat a non-stick skillet over medium heat and add the tofu mixture, cooking until it is heated through and lightly browned.
  5. Once the tofu scramble is cooked, remove it from the heat and set it aside to cool slightly before using it as a filling for your quesadilla.
