Scrambled Tofu – Basic

INGREDIENTS

1 pkg water-packed organic firm tofu (fresh, not frozen)
½ tsp salt (see salty note*)
1 tsp onion powder
1 tsp garlic powder
2 tsp turmeric
1Tbsp nutritional yeast
1-2Tbsp plant-based butter
2 Tbsp water or plant based milk – unsweetened, plain

 

 

OPTIONAL INGREDIENTS
*Himalayan Black Crystal Salt – Kala Namak  – tastes and smells like eggs but it loses it’s flavor when cooked in the dish. For best effect, sprinkle it on top before serving.

RECIPE

  1. Drain the firm tofu but no need to press or overly dry it.
    Using a sharp knife, a mandolin if you are brave, or a vegetable peeler, slice the tofu thinly and unevenly, with some pieces being wider and some smaller (you are replicating the consistency of scrambled eggs), so avoid making the pieces too tiny or mushy..
  2. Add plant-based butter to the skillet and begin to melt on low heat.
  3. Sprinkle onion powder, garlic powder, turmeric, and nutritional yeast into the melted butter and stir to combine.
  4. Add the water (or plant based milk) and stir. This will cook off but helps to coat the tofu.
  5. Gently add in and coat the tofu with the spice mixture.
  6. Raise heat to medium and cook until seasonings are
    incorporated, and tofu is hot and the liquid has reduced.
  7. Nothing needs to be “cooked,” so it is only about combining
    the flavors and reducing a bit of the water content of the tofu without making it dry.
  8. This is where you would add any of the optional additions such as sautéed vegetables etc..
  9. Season with more Pepper and Salt to taste right before serving- If you have Black Kala Namak Salt, adding a sprinkle at this point will give you great “egg” flavor.
  10. Serve as you would any scrambled egg dish. With toast, on a breakfast burrito, etc.My favorite is with toast, avocado and some breakfast potatoes.

    Fancy Scrambled Tofu Options: Add cooked onions, garlic,
    peppers, sauteed spinach or other greens, or mushrooms.
    You can also stir in some shredded plant based cheese.
    Top with thinly sliced scallions or other herbs.
