- 16 slices (8-9 cups cubed) bread (I use half GF Northern Bakehouse seeded and half GF whole grain)
- 2 tsp poultry seasoning blend
- 1 stick (1/2 cup) vegan butter
- 2 cups celery – medium chop (crosswise slices)
- 2 large onions – 3 cups medium chopped
- 1 tsp dried rosemary
- 1 tsp dried or 2 tsp fresh thyme
- 1 tbsp fresh sage chopped
- 1 1/2 cup vegetable stock (plus optional 1/2 cup) ***I use broth made with Better Than Bouillon – NO Chicken base)
- 1 tbsp tamari
- 1/2 tsp sea salt
- 1/2 tsp fresh pepper
- 1/2 chopped fresh parsley
- 1 can water chestnuts, drained and coarsely chopped
- 1 1/2 apples roughly chopped
- 1/2 cup of chopped pecans
