INGREDIENTS
3 medium zucchini/calabacitas
1 red pepper
3 medium tomatoes
Cilantro
¼ onion
½ cup corn
½ cup chickpeas
½ tbsp avocado oil
½ tsp smoked paprika
¼ tsp cumin
½ tsp coriander (optional)
½ cup water
Salt
RECIPE
Heat oil on a pan over medium heat.
Add onions and sauté for 5 minutes or until onions become transparent.
Add tomato and red pepper, stirring constantly for 3-4 minutes.
Season with smoked paprika, cumin, and coriander.
Add water, zucchini, corn, cilantro, chickpeas, and salt.
Mix well, allow everything to cook for about 5 minutes, and simmer until the vegetables are tender.
