Garbanzo Bean Flour Omelette

OPTIONAL INGREDIENTS
½ tsp baking powder for fluffier texture, Kala Namak salt for serving

INGREDIENTS

1 cup garbanzo bean flour
1 ½ cups water (can use plant milk for part or all)
1 tsp turmeric
3 tbsp nutritional yeast
½ tsp onion powder
½ tsp garlic powder
½ tsp salt
Pepper to taste

RECIPE

  1. Combine garbanzo bean flour and water, whisking well to combine, and let soak for at least 20 minutes. Maggie likes to soak it overnight.
  2. Add additional ingredients.
  3. Heat cast iron skillet.
  4. Add vegan butter or olive oil to the pan.
  5. Pour the batter into a hot pan and cook as desired. It can be poured into an omelette or scrambled as you would traditional eggs.
  6. It can also be baked in a 350-degree oven as a frittata in a cast iron skillet along with onions, peppers, potatoes, or any other favorite ingredients.
