Zucchini Fritters

Quick and easy fritters that are easy to make and can be paired with your favorite tasty sauces. These are a great way to use up extra bread that is drying out and leftover chickpeas to turn into a delicious easy dish!

OPTIONAL INGREDIENTS
Any kind of bread works for this recipe as long as it still has some softness to it. If your bread is hard you can turn it into bread crumbs and add a touch of water or vegetable broth to the mixture so it sticks together. Get creative with your dipping sauces!

INGREDIENTS

  • 1 cup (180 grams) of chickpeas
  • 1 cup (180 grams) of grated zucchini
  • 2 cups (360 grams) of bread pieces
  • 3 tsp (45ml) of nutritional yeast
  • 3 tsp (45ml) of Italian seasoning
  • ¾ tsp (4ml) of salt
  • 2 tsp of oil if pan frying or to grease your baking tray if needed

RECIPE

  1. Pre-heat the oven or air fryer to 400°F (200°C) if baking.
  2. Mash your chickpeas in a large bowl with a fork or potato masher.
  3. Grate the zucchini with the largest holes on a cheese grater, then add it to your large bowl.
  4. Tear up your bread pieces into small chunks in the bowl.
  5. Add your seasonings, then blend everything well using a fork or your hands.
  6. Form the mixture into small, evenly sized patties.
  7. Place your patties on a baking sheet or in the air fryer to cook until golden brown. About 15-20 minutes, depending on the size of your patties. Flip the patties halfway through the cooking time and making sure they are turning a nice light brown color.
  8. If pan frying, heat the oil on medium-high heat. Once hot, carefully add the patties to the pan. Cook on each side until lightly browned and they stick together, about 4-7 minutes on each side.
  9. Serve with your favorite sauce such as marinara, plant-based ranch dressing, ketchup, or BBQ sauce.
