Peel and large dice potatoes. Ensure that when they sit for a long period, they are submerged in water. This keeps them from turning brown.
Place the garlic and potatoes in a large pot. Fill with water, making sure the potatoes are completely submerged. Bring to a boil and cook for 15 minutes or until fork-tender. How long they take to cook depends on how large the potatoes are.
Drain potatoes and garlic using a colander and let sit for a few minutes.
Return drained potatoes and garlic to the pot. Add butter and mashed potatoes until smooth. Add milk and continue to mix until creamy.
Season to taste and garnish with your herbs of choice.
