INGREDIENTS

¼ cup pumpkin puree
¼ cup oat flour
2 tbsp maple syrup
1 tbsp coconut oil, melted
½ tsp pumpkin pie spice
½ tsp baking powder
½ tsp vanilla extract
⅛ tsp salt
1 tbsp chocolate chips

RECIPE

  1. In a microwave-safe mug, add the pumpkin puree, oat flour, maple syrup, melted coconut oil, pumpkin pie spice, baking powder, vanilla extract, and sea salt.
  2. Mix well until all the ingredients are fully combined and you have a smooth batter.
  3. Stir in the mini chocolate chips, saving a few to sprinkle on top if you like.
  4. Microwave on high for 1 to 2 minutes, or until the cake has set in the center.
  5. Let it cool for 1–2 minutes before enjoying (the mug will be hot!).
