Creole Lentil Chili

A heart-healthy spin on an American comfort classic, bursting with Creole flavor and packed with fiber, plant-based protein, and antioxidants.

YIELDS: 4 servings

PREP TIME: 20 min

INGREDIENTS

  • 1/2 medium onion
  • 1/2 green bell pepper
  • 2 stalks of celery
  • 3 cloves of garlic
  • 1 can (14.5oz) of petite diced tomatoes
  • 1 small can (7oz) of tomato sauce
  • 1/2 Shelby’s chili kit seasoning packet*
  • 1/2 tsp (3g) of smoked paprika
  • 1/2 tsp (3g) of garlic powder
  • 1 tsp (6g) of black pepper
  • Pinch of salt to taste
  • 1/8 tsp of cayenne pepper for spicy flavor
  • 1 cup vegetable broth
  • 1lb (454g) steamed or cooked black or green lentils
  • 2 cups (500g) cooked long-grain white rice or quinoa

 

OPTIONAL INGREDIENTS
Scallions, plant-based sour cream, plant-based shredded cheese, sliced jalapeños

RECIPE

  1. Add oil to a large pot on medium heat. Dice the onion, seeded green bell pepper, and celery, add to pot, and saute for 3-4 minutes as you mince the garlic. Add the garlic and sauté for another 1-2 minutes.
  2. Add your lentils, chili kit, and all seasonings, stirring to mix well.
  3. To the mix, add the canned diced tomatoes, tomato sauce, and vegetable broth.
  4. Bring to a boil (medium-high heat). Once boiling, stir, reduce to medium-low, and cover. Simmer covered for 15 minutes. Remove the cover and stir. Simmer for an additional 15 minutes to thicken, stirring regularly.
  5. Serve over your favorite rice and with your choice of toppings from the optional ingredients.
