Cilantro Lime Coleslaw

Refreshing and tangy coleslaw that is great as a side dish, or used as garnish for some extra crunch on tacos or bowls.

INGREDIENTS

  • ½ nappa cabbage – cored and finely sliced
  • 2 crisp apples, chopped into ½ inch pieces – green or red, a good blend of tart and sweet
  • 1 ½ cups of shredded or julienned carrots
  • 1 cup vegan mayo
  • 2 juicy limes
  • 2 Jalapeno or Serrano chiles (for more heat, use serrano) – chopped finely
  • 1 small bunch of cilantro – (about ½ a cup) chopped, including stems
  • 4 green onions- thinly sliced (whole thing)


RECIPE

  1. Combine the sliced cabbage, carrots, and apple in a large bowl and toss well.
  2. In a separate bowl, mix together the dressing ingredients- jalapenos/serranos, cilantro, green onion, lime juice, and mayo.
  3. Pour the prepared dressing over the cabbage mixture. Use a large spoon or tongs to mix until everything is thoroughly coated.
  4. Let it rest for all the flavors to soak in, can be made hours ahead of time or eaten right away. Enjoy!

 

CHEF’S NOTES:

  • The cilantro adds a unique flavor, but if you don’t like the taste, you can leave it out.
