Roasted Cabbage
- 1 round cabbage (green or purple)
- 2 tbs of olive oil
- 1 tsp of salt
- 1 tsp of lemon zest
Lemon Pepper Cream Sauce
- 2 cups vegetable stock (2 bouillon cubes w/ 2 cups of water)
- 2 small yellow potatoes (½ a cup cubed)
- ½ onion
- 2 cloves of garlic
- ¼ cup cashews
- ¼ cup of nutritional yeast
- 1 cup Northern Beans – drained
- ¼ cup of lemon juice plus zest of 1 lemon
- Pepper 1 tsp or to taste
- Pinch of Cayenne pepper
Bread Crumb Topping
- ½ cup of bread crumbs or cubes
- 1 tbs of melted plant-based butter
