10 Minute Peanut Sizzle Noodles

INGREDIENTS

  • 1/3 cup creamy peanut butter
  • 1 small shallot, diced
  • 1/4 cup sliced green onions
  • 2 tbsp chile crisp
  • 1 tbsp minced garlic
  • 1 tbsp minced ginger
  • 3 tbsp white sesame seeds
  • 3 tbsp tamari or soy sauce
  • 1/3 cup avocado oil (or other neutral, high-heat oil)
  • 8 oz brown rice udon noodles (or noodles of choice)

OPTIONAL INGREDIENTS
for garnish: sesame seeds, green onions, or roasted / chopped peanuts

RECIPE

  1. Cook the noodles according to the package instructions. (Drain and reserve 1/2 cup of pasta water).
  2. In a medium saucepan, combine all ingredients except the oil.
  3. Heat the oil until it begins to smoke, then pour it over the ingredients in the pan.
  4. Whisk immediately until the sauce is well incorporated. Add the noodles.
  5. Mix – add some reserved pasta water if needed.
  6. Serve immediately, topped with green onions and sesame seeds.
