Green Beans with Mustard Sauce

INGREDIENTS

  • 4 cups of green beans (fresh or frozen)
  • ¼ cup of olive oil, or other salad oil
  • 2 tbsp of mustard- yellow, brown, or dijon
  • 1 minced clove of garlic
  • 1 tbsp of finely chopped onion
  • 1 tsp of maple syrup or sweetener
  • ¼ tsp or tiny splash of soy sauce
  • Pinch of salt
  • Pinch of black pepper

OPTIONAL INGREDIENTS
Simple and quick way to jazz up green beans with a tasty, tangy mustard sauce.

RECIPE

  1. Wash and trim the ends of your green beans to remove any small stems left on.
  2. You can cook your green beans in 3 ways: sauteed, steamed, or boiled. All taste great!

 

Sauteed

    • Add 1-2 tbsp of oil to a skillet, heat until shimmery
    • Then add your green beans and cover, stirring regularly.
    • Cook for 5-10 minutes, depending on how soft you like them.

Steamed

    • Place the green beans in a covered microwave-safe dish with a little water in the bottom.
    • Microwave for 2.5-4 minutes until tender. Start with 2 minutes and see how firm they feel, then cook for an additional 1-2 minutes, OR Boil them in water for 3-4 minutes.
  1. To make the sauce, combine the oil, mustard, syrup/sweetener, garlic, onion, and a tiny splash of soy sauce into a small bowl and mix well.
  2. Once the green beans are done, transfer them to a large bowl and pour over the sauce.
  3. Add a pinch of salt and pepper, then mix well so the sauce coats all the green beans.
  4. Taste, add more salt if needed. Enjoy!

 

CHEF’S NOTES:

  • You can serve the green beans warm or chilled.
  • For an easy salad option, you can chop up the green beans and add them to lettuce greens or a salad you already enjoy.
