RECIPE

Prepare Peach Chia Pudding
1. Blend Peach Base: Add peaches, plant-based milk, monk fruit maple syrup, and vanilla extract to a blender and blend until smooth.
2. Add Chia Seeds: Stir chia seeds into the peach mixture until evenly distributed.
3. Rest and Stir: Allow the mixture to sit for 15 minutes, then stir again thoroughly to break up any clumps.
4. Refrigerate: Cover and refrigerate for at least 2 hours, or until pudding has thickened.

Prepare Peach Cobbler Topping
5. Combine Ingredients: In a saucepan over medium heat, combine frozen peaches, plant-based butter, vanilla extract, cinnamon, and water.
6. Cook Peaches: Cook for approximately 10–15 minutes, stirring occasionally, until peaches soften and release their juices.
7. Reduce Liquid: Continue cooking until the liquid reduces slightly and forms a cinnamon-peach sauce. Gently mash a few peach pieces if a thicker consistency is desired.
8. Cool: Remove from heat and allow the topping to cool before assembling the pudding cups.

Assemble Chia Pudding Cups
9. Portion Pudding: Divide chilled peach chia pudding evenly among four mason jars or air-tight containers leaving 2” from the top for the toppings.
10. Add Crumble: Sprinkle approximately ⅓ cup of Grain-Free Granola (or nuts) over each pudding cup
11. Add Cobbler Topping: Spoon 2tbs cooled cinnamon-peach topping evenly over each serving.
12. Serve: Enjoy chilled.

Chef’s Notes
Plant-Based Milk: Unsweetened, high-protein soy milk is a great option for boosting protein without adding unnecessary sugar.
Serving Tip: For a more pronounced cobbler flavor, lightly warm the cinnamon-peach topping before adding it to the chilled pudding.
