I always get a little wistful at the end of summer. But it’s not the beachy weekends I’ll miss, or some back to school melancholy left over from childhood. No, it’s because we’re nearing the end of zucchini season here in the US!
Zucchini is one of my favorite vegetables, because it’s so versatile. Not only is it nutrient dense, heart healthy, and filled with fiber, but there is so much you can do with it. From experimenting with its texture to highlighting its subtle flavor, there are endless recipe possibilities.
