BBQ Tofu Wrap

Quick and easy meal using tofu and fresh veggies for a nice crunch and extra fiber to fill you up! No cooking required.

INGREDIENTS

  • 7oz of firm tofu – half a block
  • 1 celery stalk
  • 1 small carrot
  • 1 green onion
  • 3 tbsp of BBQ sauce or to taste
  • 2 wraps or tortillas
  • 1/4 cup (22.25 grams) of shredded cabbage or a crunchy lettuce
  • 1 tsp of soy sauce
  • Pinch of black pepper to taste


RECIPE

  1. Press the tofu, leaving it to sit under a weight to drain off some water while you prepare the vegetables.
  2. Finely slice the celery stalk, including the leaves.
  3. Grate or finely chop the carrot.
  4. Slice the green onion.
  5. Chop the cabbage or lettuce.
  6. Crumble the drained tofu into a bowl, mix well with the BBQ sauce and black pepper, then add the celery, carrots, and green onion.
  7. Lay out the salad in the middle of the wrap and top with cabbage or lettuce.
  8. Roll up and enjoy!

 

CHEF’S NOTES:

  • If you want a warm, heartier version, you can sauté the tofu with some frozen mixed vegetables or whatever you have on hand before mixing in the BBQ sauce and crunchy veggies.
  • Spice it up! You can add some crushed red pepper or make it buffalo-style with your favorite hot sauce.
  • Tempeh will also work well in this recipe; just cook your tempeh first.
