Carrot Dogs

A fun way to eat carrots and they smell like a NYC hot dog cart when cooking! It’s all about the toppings with these dogs, get creative and load them up with all your favorite things.

INGREDIENTS

  • 2 large carrots
  • 3 cups of vegetable broth (may change based on pan size)
  • 1/4 onion, roughly chopped
  • 2 tbsp of soy sauce
  • 2 tbsp of ketchup
  • 1 tbsp of mustard
  • 2 tsp of smoked paprika
  • 2 tsp of garlic powder


RECIPE

  1. Clean and peel the carrots, trim the ends
  2. Add all ingredients to the pan, including the carrots.
  3. Simmer on medium heat covered until the carrots are slightly tender, 15-20 minutes, stirring occasionally
  4. Prep the toppings and buns while the carrots cook
  5. Remove the carrots from the pot and let them cool briefly, or for more flavor you can let them marinate in the liquid (up to 24 hours) and reheat on the grill or in a pan for about 5 minutes.
  6. Place the carrots in the buns and add your toppings. Enjoy!
