Chia Seed Pudding 3 Ways

This recipe shows you how to make chia pudding three different ways — think matcha-strawberry, chocolate-nut, and chai-spiced — each version creamy, customizable, and ready in just 15 minutes. It’s a wholesome, versatile breakfast or snack that lets you mix and match flavors to suit your mood.

INGREDIENTS

For one batch of chia pudding:

  • ¼ cup chia
  • 1 cup water

 

For the Matcha Strawberry Pudding:

  • 2 tsp matcha
  • 2 tbsp hot water
  • ½ – 1 tbsp monk fruit syrup
  • ¼ ½ tsp of vanilla extract
  • 2 cups strawberries, wash and cut
  • Juice of ½ lemon
  • 1 tsp agave

To serve: coconut whipped cream, yogurt, strawberries

 

For the Choco Nut Pudding:

  • 1 tbsp cocoa powder
  • 1 tbsp maple syrup
  • Dash of vanilla extract
  • 1 tbsp almond butter

To serve: banana slices, granola, nut butter

 

For the Chai Spiced Pudding:

  • Dash of vanilla extract
  • 1 tbsp of Chai Masala
  • ½ cup of coconut yogurt
  • ½ tbsp date syrup (to taste)

To serve: date syrup, coconut flakes, granola, etc.

RECIPE

For one batch of chia pudding:
1. Mix 1/4 cup chia seeds with 1 cup cold or room temperature water

 

For the Matcha + Strawberry:
1. Make the matcha chia pudding. Whisk 2 tablespoons of hot water + 2 teaspoons matcha in small bowl. Add matcha to chia pudding with monk fruit syrup and vanilla. Mix to combine, using milk of choice to thin out as needed.
2. Make the strawberry compote. In a saucepan, add the strawberries, lemon juice, and agave. Cook for about 10 – 15 minutes until the strawberries become mushy. Remove from heat and put in fridge to cool.
3. To serve, add a few tablespoons of the compote to the bottom of a glass or bowl, and top with chia pudding. Serve with coconut yogurt or whipped cream, and more fresh strawberries. Enjoy!

 

For the Choco Nut:
1. Make the Choco Nut chia pudding. Add the plain chia pudding to a bowl, then add cocoa powder, maple syrup, and vanilla. Mix to combine, using milk of choice to thin out as needed.
2. To serve, add almond butter, banana, granola, or toppings of choice. Enjoy!

 

For the Chai Spiced:
1. Make the Chai Spiced chia pudding. Add the plain chia pudding to a bowl, then add vanilla, chai masala, coconut yogurt, and date syrup to taste. Mix to combine, using milk of choice to thin out as needed.
2. To serve, top with additional date syrup, coconut flakes, or toppings of choice. Enjoy!
