- ½ nappa cabbage – cored and finely sliced
- 2 crisp apples, chopped into ½ inch pieces – green or red, a good blend of tart and sweet
- 1 ½ cups of shredded or julienned carrots
- 1 cup vegan mayo
- 2 juicy limes
- 2 Jalapeno or Serrano chiles (for more heat, use serrano) – chopped finely
- 1 small bunch of cilantro – (about ½ a cup) chopped, including stems
- 4 green onions- thinly sliced (whole thing)
