Cranberry Orange Walnut Relish

This Cranberry Orange Walnut Relish is a delightful and versatile addition to your meals, perfect for spreading on bread, serving alongside tofu dishes, or as a flavorful topping for desserts. Adjust the sweetness to your liking!


INGREDIENTS

  • 3 cups fresh cranberries
  • 1 large orange
  • ¾ cup walnuts (or more to your liking)
  • ¾ cup sugar (or chopped up dates, if preferred)

RECIPE

  1. Rinse the cranberries and set them aside.
  2. Peel the oranges and separate them into segments.
  3. In a processor bowl, add the cranberries. Give it a few quick pulses to start the breakdown process.
  4. Add the peeled orange(s) to the processor bowl.
  5. Add the walnuts to the mixture in the processor.
  6. Sprinkle in the sugar (or add chopped dates if you prefer). Adjust the quantity based on your desired level of sweetness.
  7. Secure the lid on the food processor bowl and pulse the ingredients in short bursts. Aim for a texture resembling large crumbs.
  8. Transfer the cranberry orange walnut relish to a sealed container and enjoy right away, or store in the refrigerator for up to a week.

Try not to over-pulsate the mixture! The goal is to get a coarse texture, not a smooth puree.
