Fruit Salad

OPTIONAL INGREDIENTS
1 tsp of chia seeds or flax seeds

INGREDIENTS

1 orange
6 strawberries
2 ripe plums, nectarines, or a large peach
1 tsp of coconut flakes

RECIPE

  1. Remove or cut the skin and white soft pith off the orange.
  2. Slice the orange into about 5 rounds, then cut those in half.  You want to end up with half circles that are flat on each side.
  3. Put the sliced oranges and their juice into a large bowl.
  4. Add the chia or flax seeds, if using, to the bowl and let sit while you cut the rest of the fruit.
  5. Remove the tops of the strawberries and cut into bite-sized pieces.
  6. Carefully cut in half the plum, nectarine, or peach to remove the pit in the middle, being careful not to squish the soft fruit.
  7. Cut them into bite-sized pieces as well, and add them and their juice to the bowl.
  8. Sprinkle the coconut flakes over the fruit in the bowl.
  9. Stir softly to coat the fruit with the juices and the chia seeds.
  10. Serve at room temperature or chilled, and enjoy!
