Garlic Spinach Pasta

A simple pasta dish that incorporates spinach greens that you can use up for a healthy dish that even kids will enjoy

YIELDS: 4 servings

INGREDIENTS

  • 8 oz of pasta (half a bag)
  • ½ bag (4oz) of spinach
  • 2-4 cloves of garlic (to your taste preference)
  • 1/4 of a sweet onion
  • 2 tbsp olive oil
  • Fresh or bottled lemon juice
  • Salt and Pepper to taste

OPTIONAL INGREDIENTS
For the pasta, I use the spiral kind, so all the spicy goodness can work its way into the twists and turns. Feel free to use whatever pasta you have.

RECIPE

  1. Start by boiling water for your pasta.
  2. Put the garlic and onion in a food processor/chopper, then sauté in a large skillet (that will be large enough to hold all the ingredients by the end) with 1 tbsp olive oil.
  3. Next, chop the spinach in the food processor. If you can’t jam all the spinach in at once, you can do it in batches.
  4. Once the garlic and onion have started to brown and become aromatic, add the diced spinach and the second tbsp of olive oil. Stir the spinach so it gets a good coating of the garlic/onion/olive oil mixture.
  5. Drain pasta and add to the skillet. Stir until the spinach is evenly distributed. Add salt and pepper to taste, and add fresh-squeezed lemon. I typically use half a lemon.
  6. Scoop into a bowl and serve hot! Enjoy.

 

CHEF’S NOTES:

  • This dish can easily be doubled to serve more people or for meal prep.
