Roasted Tempeh and Sweet Potatoes
- 2 cups (473ml) of diced sweet potatoes, about 2 medium-sized
- 1 block of tempeh (227g)
- 2 tsp of Italian seasoning
- 1 tsp of olive oil
- Salt and pepper to taste
Tahini Date Dressing
- 3 large dates, pitted
- ¼ cup (60ml) of hot water
- ¼ (60ml) cup of tahini
- ¼ (60ml) cup of fresh orange juice
- 3 tbs of apple cider vinegar
- ½ tsp of Italian seasoning
- ¼ tsp of smoked paprika
Salad
- 4 cups (140g) mixed greens
- ½ cup (118ml) of pomegranate seeds
- ¼ cup (60ml) of sliced red onion
- ¼ cup (60ml) of shelled pumpkin seeds
