Harvest Salad

A hearty fall salad with herby sweet potatoes and tempeh for protein and fiber, and a refreshing crunch from tart pomegranate seeds. This unique dressing pulls all the fall flavors together!

INGREDIENTS

Roasted Tempeh and Sweet Potatoes

  • 2 cups (473ml) of diced sweet potatoes, about 2 medium-sized
  • 1 block of tempeh (227g)
  • 2 tsp of Italian seasoning
  • 1 tsp of olive oil
  • Salt and pepper to taste

 

Tahini Date Dressing

  • 3 large dates, pitted
  • ¼ cup (60ml) of hot water
  • ¼ (60ml) cup of tahini
  • ¼ (60ml) cup of fresh orange juice
  • 3 tbs of apple cider vinegar
  • ½ tsp of Italian seasoning
  • ¼ tsp of smoked paprika

 

Salad

  • 4 cups (140g) mixed greens
  • ½ cup (118ml) of pomegranate seeds
  • ¼ cup (60ml) of sliced red onion
  • ¼ cup (60ml) of shelled pumpkin seeds

RECIPE

  1. Preheat oven to 350°F.
  2. Dice the sweet potatoes into 1” cubes and place on a baking sheet.
  3. Crumble the tempeh onto the baking sheet.
  4. Drizzle the tempeh and sweet potatoes with the olive oil and sprinkle on the seasoning, mix well.
  5. Place in the oven to bake for about 30 minutes, until the sweet potatoes are soft. Let cool after baking.
  6. Prepare the dressing. In a blender, add the dates and hot water, let them sit while you gather the other dressing ingredients.
  7. Add the remaining dressing ingredients- tahini, orange juice, vinegar, and seasonings. Blend until the dressing is smooth in texture.
  8. In a large bowl, begin to prepare the salad by adding the mixed greens and sliced red onion. Add the cooled sweet potatoes and tempeh.
  9. Pour about half of the dressing over the salad, adding it slowly – different greens absorb dressing differently, so adjust as needed.
  10. Toss well.
  11. Top the salad with the pumpkin seeds and pomegranate seeds. Enjoy!

 

CHEF’S NOTES:

  • When making the dressing, if your tahini is thick, you may need a little extra hot water to thin out the dressing.
  • Make extra dressing for later; this stores well in the fridge.
