Mango Ceviche Tostadas

INGREDIENTS

  • 4 corn tostadas
  • 1 ½ cups cooked black beans
  • 2 roma tomatoes
  • 2 medium mangos
  • 1 handful of cilantro
  • 2 medium avocados
  • Juice of 1 grapefruit
  • 1 cup pineapple
  • 2 garlic cloves
  • 1 pinch oregano
  • ¼ tsp paprika
  • 2 tbsp olive oil
  • Pinch of cumin
  • ½ habanero pepper
  • ½ red onion
  • Juice of 10 limes
  • Half a head of lettuce
  • Salt and pepper to taste


RECIPE

  1. First, let’s marinate our onions. Slice your red onion and add the juice of 10 limes. Marinate for at least 30min.
  2. In a bowl, mix the following ingredients (chopped): tomatoes, mangoes, cilantro, and avocado (mash the avocado).
  3. Add pineapple, grapefruit juice, habanero, salt, garlic cloves, oregano, paprika, olive oil, cumin, and pepper in a blender. Blend until smooth.
  4. Pick your favorite beans, warm them up, and mash them.

BUILD THEM UP
1. Grab a tostada.
2. Cover that tostada with beans.
3. Add the chopped lettuce or any greens of your choice.
4. Add the avocado mixture.
5. Top with marinated onions.
6. For the last layer, drizzle the pineapple habanero sauce on top of it.
