One Pot Daal

INGREDIENTS

  • 2 cloves garlic, minced
  • A thumb-sized piece of ginger
  • 1 tsp cumin
  • 1 tsp ground coriander
  • 1 tsp curry powder
  • 1/2 tsp paprika powder
  • 2 tbsp tomato paste
  • 200g red lentils (1 cup)
  • 300ml canned coconut milk
  • 300ml water
  • salt
  • juice of half a lime
  • cilantro
  • lime
  • Naan

OPTIONAL INGREDIENTS
Naan, Chili

RECIPE

  1. Sauté garlic and ginger in oil in a pan.
  2. Add spices and tomato paste and roast briefly.
  3. Add red lentils. coconut milk, water, salt, and lime juice.
  4. Mix well, cover, and simmer on medium heat for 15-20 mins.
  5. Serve with cilantro, lime, and naan.
