Protein Bars

OPTIONAL INGREDIENTS
vegan protein powder
INGREDIENTS
1 cup old-fashioned oats
1 cup rice puffs
1 scoop of vegan protein powder (optional)
1 cup mixed nuts
¼ cup dried apricots
¼ cup cranberries
¼ cup pumpkin seeds
¼ cup sunflower seeds
¼ cup nut butter (I used almond)
1 tsp vanilla
¼ cup maple syrup
2 tbsp coconut oil
Pinch of salt
Orange peel
½ cup chocolate chips
1 tbsp coconut oil
RECIPE
Add all the wet ingredients to a bowl and mix until everything is smooth. Then add all the dry ingredients and mix well, including the orange peel.
Transfer into a loaf tin and press down using a spatula.
Break up the chocolate into a heat-proof bowl and add the coconut oil. Melt in the microwave or over a pan of simmering water.
Pour the chocolate on top, top with sea salt and some orange peel, then refrigerate until set.
Slice into bars.
