Roasted Cabbage with Lemon Pepper Cream Sauce

A hearty, cozy way to prepare cabbage, with hidden protein and fiber in the rich, creamy sauce, we love the crunch of the breadcrumbs on top.

INGREDIENTS

Roasted Cabbage

  • 1 round cabbage (green or purple)
  • 2 tbs of olive oil
  • 1 tsp of salt
  • 1 tsp of lemon zest

Lemon Pepper Cream Sauce

  • 2 cups vegetable stock (2 bouillon cubes w/ 2 cups of water)
  • 2 small yellow potatoes (½ a cup cubed)
  • ½ onion
  • 2 cloves of garlic
  • ¼ cup cashews
  • ¼ cup of nutritional yeast
  • 1 cup Northern Beans – drained
  • ¼ cup of lemon juice plus zest of 1 lemon
  • Pepper 1 tsp or to taste
  • Pinch of Cayenne pepper

Bread Crumb Topping

  • ½ cup of bread crumbs or cubes
  • 1 tbs of melted plant-based butter


RECIPE

  1. Preheat oven or air fryer to 400 degrees.
  2. Cut cabbage cut into 4-6 thick wedges, depending on the size of your cabbage.
  3. Zest your lemon, then mix it with the salt to create a lemon-flavored salt.
  4. For the sauce – in a small pot, boil two yellow potatoes, half of a yellow onion, one clove of garlic, ¼ cup of cashews in the vegetable broth (can be made with water and bouillon) until vegetables are soft, about 10-15 minutes, then remove from heat and let sit to cool.
  5. While the sauce ingredients boil, heat olive oil in a skillet until hot, then place cabbage wedges in the skillet.
  6. Cook on medium-high heat until slightly browned. Gently turn the cabbage and brown on the other side, trying to keep the wedges intact, sprinkle on more lemon salt. Once done, place cabbage in a glass baking dish
  7. To finish the sauce, blend the softened vegetables, nutritional yeast, northern beans, lemon juice, milk, cayenne pepper, salt, and pepper in a high-speed blender or with an immersion blender in the pot. Puree until smooth.
  8. Cover with cabbage wedges with the lemon pepper cream sauce and bake until the cabbage is very soft and tender. About 30-40 minutes.
  9. Combine the melted plant-based butter and bread cubes in a bowl, and mix until combined.
  10. Add the bread crumbs on top of the cabbage and then bake until lightly browned.
