Single-Serve Chocolate Chip Cookie

INGREDIENTS

  • 2 tbsp (26g) packed brown sugar
  • (~1/16 tsp) pinch of salt
  • 1 tbsp + 1 tsp (18g) vegan butter (block-style preferred, softened)
  • 1 tsp neutral oil
  • 1/8 tsp vanilla extract (a couple of drops)
  • Tiny pinch instant coffee (dissolved in 1/4 tsp hot water — optional)
  • 3 tbsp (24g) all-purpose flour
  • 1/2 tsp cornstarch
  • 1/8 tsp baking soda
  • 3 tbsp (about 45g) chopped dark chocolate

 

OPTIONAL INGREDIENTS
Flakey sea salt to sprinkle

RECIPE

  1. Preheat oven to 350°F (175°C) and line a small baking sheet.
  2. In a small bowl, cream vegan butter, brown sugar, and salt until smooth.
  3. Mix in oil, vanilla, and dissolved coffee (if using).
  4. Add flour, cornstarch, and baking soda; stir until just combined.
  5. Fold in chocolate, leaving a few chunks for the top.
  6. Shape into one large ball, place on a baking sheet, and slightly flatten the top (about 1 1/4 inches thick).
  7. Bake 12–14 minutes, until edges are set, but the center still looks soft.
  8. Cool 5–10 minutes; sprinkle with flaky salt if desired.
