Smoky Lentil & Sweet Potato Loaf

INGREDIENTS

  • 1 cup cooked green or brown lentils
  • 1 cup mashed sweet potatoes
  • 1 small onion
  • Finely-diced 3 garlic cloves
  • Minced 1 cup rolled oats (or breadcrumbs)
  • 2 tbsp ground flaxseed mixed with 5 tbsp water (flax egg)
  • 2 tbsp tomato paste
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • ½ tsp cayenne (optional)
  • ½ tsp salt
  • ¼ tsp black pepper


RECIPE

  1. Preheat oven to 375°F (190°C) and line a loaf pan with parchment paper.
  2. In a bowl, mix lentils, sweet potatoes, onions, garlic, oats, flax egg, tomato paste, and spices until well combined.
  3. Mash some lentils for texture.
  4. Press mixture into the prepared loaf pan.
  5. Mix the glaze ingredients, then spread it evenly over the loaf.
  6. Bake for 40-45 minutes, let cool slightly, then slice and serve.
