Soil Parfait

A healthy twist on dirt pudding that makes a fun breakfast, snack or dessert! This recipe can be used as a base for you to get creative with.

INGREDIENTS

  • 3 cups of vanilla plant-based yogurt
  • 1 cup of granola
  • 1 cup of blueberries (fresh or frozen)
  • 3 tbsp of cocoa powder
  • 2 tbsp of ground flax seeds
  • 2 tsp of cinnamon

OPTIONAL INGREDIENTS
4-6 crushed Oreo-style cookies – you can add them as your top-dirt layer in addition to the granola, if you would like. 4 tbsp of peanut butter or your favorite nut butter.

RECIPE

  1. Mix the yogurt with the cocoa powder and cinnamon until blended. Taste to see if it is chocolatey enough for you, add more cocoa powder if you would like, and set the rest aside.
  2. In a large glass dish or in the 4 smaller glass dishes, add a layer of granola and a few blueberries as the base of the parfait.
  3. Then, for the second layer, evenly distribute the yogurt mixture.
  4. On top of the yogurt, add the remaining granola, and then sprinkle on the flaxseed.
  5. Add the remaining blueberries and any additional toppings you choose. Enjoy!

 

CHEF’S NOTES:

  • You can get creative by decorating the top of this parfait with more fruits, nuts, seeds, or even gelatin-free gummy worms for a sweet treat. What makes this fun is that you can see the ‘dirt’ layers, so glass or clear dishes are preferred, but not necessary.
  • Chocolate pudding can also be used in place of yogurt. You can make a pudding mix with plant milk, since many chocolate pudding mixes are plant-based!
