Watermelon Cucumber Salad

Refreshing summer salad that blends sweet, juicy fruit with a touch of savory.

OPTIONAL INGREDIENTS
Substitute the watermelon or add a portion of: pineapple, papaya, grapes, plums, or peaches. Add hot peppers to taste, such as jalapeno or serrano. Substitute Tajin for the salt.

INGREDIENTS

  • 3 cups of cubed watermelon pieces
  • 2 cups thinly sliced cucumber, about 1 large cucumber
  • ¼ cup of thinly sliced onion
  • ¼ cup of chopped fresh mint leaves
  • 2 tbsp of lime juice, about ½ a lime
  • 1 tsp of olive oil
  • Pinch of salt

RECIPE

  1. Cut the watermelon into about 1.5” (4cm) cubes, put them along with the juice on the cutting board into a large bowl
  2. Thinly slice the cucumber, removing some of the skin if it is tough.
  3. Thinly slice the red onion, so it is still see through.
  4. Add the cucumber and onion to the bowl, then squeeze the lime juice over top. Lookout for seeds.
  5. Gently wash and then pat dry your mint leaves, then chop or tear the leaves into small pieces. Sprinkle them in the bowl.
  6. Pour the olive oil evenly into the bowl and add the pinch of salt.
  7. Mix all ingredients so the mint is well incorporated, and you start to see the juices released.
  8. Give a taste to see if you need more salt or lime juice.
  9. Enjoy!
