Zucchini Summer Pasta

Summer vegetables are simply roasted and paired with fresh herbs for a flavorful and healthy pasta dish.

OPTIONAL INGREDIENTS
If using larger tomatoes you can halve or quarter them. Other vegetables can be added for tasting as well, eggplant is a great addition that is also in season.

INGREDIENTS

  • 1 pound package (454 grams) of your favorite pasta- we recommend fusilli or penne
  • 2 medium zucchinis
  • 1 cup (180 grams) of cherry tomatoes
  • 1 large bell pepper
  • 1 medium yellow or sweet onion
  • 2-4 cloves of garlic
  • 1 tbsp (15ml) of olive oil for roasting
  • 1 tsp (5ml) of pepper flakes, or to taste
  • ½ tsp (2.5ml) sea salt, or to taste
  • 1 tsp (5ml) of fresh or dried oregano
  • 2-3 tbsp (30-45 ml) of olive oil, on finished pasta
  • ¼ cup (32 grams) of fresh basil, chopped
  • Pinch of black pepper to taste

RECIPE

  1. Preheat the oven or air fryer to 400°F (200°C).
  2. Start your pot of water to boil.
  3. Chop the zucchini, bell pepper, and onion into uniform pieces that are all similar in size to the cherry tomatoes so they roast evenly.
  4. Remove the skins from the garlic cloves and cut them in half.
  5. Add the chopped vegetables, tomatoes, and garlic to a large baking sheet and spread out evenly. Coat with the olive oil, salt, red pepper, and oregano.
  6. Put the tray into the oven and bake for about 20-25 minutes until the vegetables are soft and browned.
  7. Once the water is boiling add your pasta and cook to package instructions.
  8. In a large bowl, combine the finished roasted vegetables, cooked pasta, and fresh chopped basil. Top off with more olive oil so the pasta is well coated. Stir together and give a taste to see if more salt, pepper, or herbs like fresh basil or oregano are needed.

 

CHEF’S NOTES:
– Vegan parmesan can be added to top off the pasta
– If you prefer a blended sauce, you can puree all the ingredients in a blender, adding in some extra tomatoes or tomato paste.
– Food waste tip- do you have veggies about to go bad in the fridge? Just roast them as well to clean out your fridg,e and then you can blend them up and freeze the sauce for later!
